Hot when raw and mild when cooked.
Turban varieties are the earliest garlics to mature. Therefore, if they don’t get off to a quick start they may not bulk up as much as other varieties. I often harvest them around July 4th. Definitely the first garlic to market. The scapes droop but do not curl.
